Chocolate avocade mousse

Ingredients

  • 100g dark chocolate, melted
  • 2 ripe avocados, peeled, stoned, coarsely chopped
  • 1/3 cup (25g) cocoa powder
  • 2 tbs coconut sugar
  • 1/4 cup (60ml) maple syrup
  • 2 tsp vanilla bean paste
  • Pinch of sea salt flakes
  • Cadbury Flake chocolate bar, crumbled, to serve
  • Fresh raspberries, to serve

Method

  1. Step 1

    Place the chocolate, avocado, cocoa powder, coconut sugar, maple syrup, vanilla bean paste and salt in a blender or food processor. Blend or process until smooth and creamy.
  2. Step 2

    Spoon the mousse mixture into ½-cup (125ml) capacity glasses. Place in the fridge for 2 hours to chill.
  3. Step 3

    Serve sprinkled with crumbled chocolate and raspberries.
