Make the most of spring vegetables in season and try this crunchy chopped snow pea salad. It’s a refreshing light meal or side.

Chopped snow pea salad


  • 300g snow peas, trimmed, thinly sliced
  • 1/2 cup (60g) frozen baby peas
  • 2 spring onions, thinly sliced
  • 200g cherry tomatoes, halved
  • 1 bunch radishes, thinly sliced
  • 1/2 bunch mint, leaves picked
  • 2 tbs flaked almonds, toasted
  • Lemon zest, to serve
  • 1/2 cup (125ml) Coles Kitchen Green Goddess Dressing

  1. Step 1

    Place the snow peas and baby peas in a heatproof bowl. Cover with boiling water and set aside for 30 secs or until tender-crisp. Refresh under cold water. Drain well.
  2. Step 2

    Combine the pea mixture with spring onion, tomato, radish and mint leaves in a large bowl. Sprinkle with almond and lemon zest. Drizzle with salad dressing to serve.
