Chorizo-stuffed pork roast

Ingredients

  • 3kg Coles Australian Pork Leg Roast Bone In
  • 1 chorizo sausage, finely chopped
  • 1 tbs finely chopped flat-leaf parsley
  • 1 tbs finely chopped basil
  • 2 tbs olive oil
  • 1 tsp sea salt
  • 1kg orange sweet potato, cut into 4cm pieces
  • Steamed green beans, to serve
  • Lemon wedges, to serve
  • Finely chopped basil, extra, to sprinkle

Method

  1. Step 1

    Preheat oven 230°C. Pat the pork dry with paper towel. Use a sharp knife to make 1cm-deep cuts into the rind on the top of pork at 2cm intervals. Place the pork in a large roasting pan.
  2. Step 2

    Combine the chorizo, parsley and basil in a small bowl. Stuff the chorizo mixture into the cuts in the pork. Drizzle with oil and sprinkle with salt.
  3. Step 3

    Roast the pork for 30 mins. Reduce oven to 180°C. Roast pork for a further 2½ hours or until pork is cooked through, adding the sweet potato to the pan for the last 50 mins of cooking time, covering the pork with foil if over-browning.

  4. Step 4

    Sprinkle the sweet potato with extra basil. Serve the pork with sweet potato, green beans and lemon wedges.
