Create a Peters Christmas Joy Cake!

Christmas Joy cake

Ingredients

  • Vegetable oil
  • 1 1/2 tbls water
  • 1 tbls caster sugar
  • 2 litre Peters Original Vanilla Ice Cream, softened
  • ½ punnet strawberries, cut into thick slices
  • ½ tsp vanilla paste
  • 1 cup mixed fresh blueberries & raspberries

Method

  1. Step 1

    Lightly spray or brush oil on the inside of a 2.5 litre capacity bowl. Line the bowl with a double layer of plastic wrap or muslin, leaving approximately 10cm of overhang.

  2. Step 2

    In a small saucepan, add water, vanilla paste and sugar and stir over low heat until sugar dissolves. Add strawberries, and coat with syrup. Gently simmer for 2 minutes, or until strawberries are slightly softened and juices release. Turn off heat and gently fold through blueberries and raspberries. Sit for 5 minutes. Transfer to a bowl and let cool.

  3. Step 3

    To assemble ice cream cake: Spread a few dollops of ice cream, then a thin layer of berries with a little of the syrup and then one layer biscuits. Repeat process. Cover with overhanging cling wrap/muslin. Place in the freezer for 8 hrs or overnight until set.

  4. Step 4

    Lift the pudding out of the bowl and transfer onto a cold serving plate. Decorate with ice magic and berries.
