Classic butter chicken

Ingredients

  • 1 tbs oil
  • 20g butter
  • 1 brown onion, finely chopped
  • 1 tsp finely grated ginger
  • 2 fresh garlic cloves, crushed
  • 2 Coles Australian RSPCA Approved Chicken Breast Fillets, chopped
  • 1/2 cup (100g) tomato paste
  • 1 tbs garam masala
  • 1 tsp chilli powder
  • 1 tsp yellow mustard seeds
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 1 cup (250ml) thickened cream

Method

  1. Step 1

    Heat a saucepan over medium-high heat. Add oil, butter and onion. Cook, stirring, for 3-4 mins or until the onion is light golden. Add the ginger and garlic. Stir for 30 secs or until aromatic.
  2. Step 2

    Add the chicken, tomato paste, garam masala, chilli powder, mustard seeds, cumin, salt and pepper. Cook, stirring occasionally, for 8-10 mins or until chicken is cooked through.
  3. Step 3

    Reduce heat to medium-low. Add the cream and bring to a simmer. Cook, stirring occasionally, for 8-10 mins or until the mixture thickens. Transfer to a large serving dish.

    Serve with... coriander sprigs, toasted flaked almonds, naan bread, yoghurt and steamed basmati rice.

This easy butter chicken recipe was first shared on the Coles Cooking Club by member Lisa Fudge as one of the first dishes her 22-year-old son Nick learned to cook. “Our boy Nicholas is 22 years old and just so happens to have autism,” Lisa says. “His father and I know we won’t always be around to do things for him, so we enlisted the help of a habit coach to teach him to cook some basic meals. Nick’s butter chicken isn’t a traditional recipe by any stretch of the imagination, but it’s perfect for him to make,” she explains. “I love the look on Nick’s face while he’s eating it.”
