Ingredients

  • 2.6kg Coles Australian Lamb Whole Leg Roast
  • ¼ cup (60ml) extra virgin olive oil
  • 2 garlic cloves, cut into small strips
  • 2 whole garlic bulbs, halved horizontally
  • 3 rosemary stems, cut into small sprigs
  • 4 rosemary stems, extra
  • Coles Coleslaw Supreme vegetable mix, to serve
  • Balsamic dressing, to serve
  • Coles Kitchen Pasta Salad, to serve

Method

  1. Step 1

    Preheat a covered barbecue on medium. (Alternatively, preheat oven to 200°C.)
  2. Step 2

    Using a small knife, make slits all over lamb. Rub oil over lamb. Season well. Place 1 piece of garlic and 1 small sprig rosemary in each slit. Place extra rosemary, halved garlic bulbs and lamb in a disposable baking tray. Roast in covered barbecue using indirect heat, or in oven, for 2 hours 30 mins for medium or until cooked to liking.
  3. Step 3

    Transfer lamb to a plate and cover with foil. Set aside for 20 mins to rest.
  4. Step 4

    Drizzle coleslaw mix with dressing. Serve lamb with coleslaw and pasta salad.
