Ingredients

  • 1 tsp vegetable oil
  • 4 thin Coles BBQ Sausages
  • 1 avocado, mashed
  • 2 tsp lemon juice
  • 4 Coles Hot Dog Rolls
  • ⅓ cup (100g) whole-egg mayonnaise
  • 1 tomato, finely chopped
  • ½ small red onion, finely chopped
  • 2 tbs coriander leaves
  • Sweet potato wedges, to serve

Method

  1. Step 1

    Heat oil in a medium saucepan over medium heat. Cook sausages, turning, for 5 mins or until cooked through.
  2. Step 2

    Meanwhile, combine avocado and lemon juice in a medium bowl. Season.
  3. Step 3

    Place sausages in rolls. Top with mayonnaise, avocado mixture, tomato, onion and coriander leaves. Serve with sweet potato wedges.
