Corn fritters with chargrilled prawn salad

Ingredients

  • 2 x 300g pkts Coles Mini Corn Fritters
  • 1kg raw banana prawns, peeled leaving tails intact, deveined
  • 120g baby rocket leaves
  • 1 large avocado, stoned, peeled, thinly sliced
  • 1/3 cup (100g) chopped semi-dried tomatoes, 1 tbs oil reserved

Method

  1. Step 1

    Cook the corn fritters in the oven following packet directions.

  2. Step 2

    Meanwhile, heat a lightly greased barbecue grill or flat plate on medium-high. Season the prawns. Cook for 1-2 mins each side or until prawns curl and change colour. 

  3. Step 3

    Place the rocket in a large bowl. Add the prawns, avocado, tomato and reserved oil. Gently toss to combine. Divide the prawn mixture among serving bowls. Season with pepper and serve with corn fritters.
