A great salad that will suit so many occasions. Cooked beef, until it is soft and tender, with a crunchy salad is the ultimate pairing.

Corned beef, apple and lentil salad

Ingredients

  • 1kg Coles Australian Beef Corned Silverside
  • 1 carrot, coarsely chopped
  • 1 brown onion, coarsely chopped
  • 1 celery stick, coarsely chopped
  • 1 tbs brown sugar
  • 1 tbs white vinegar
  • 400g can lentils, drained, rinsed
  • 140g pkt Coles Australian Chopped Kale
  • 1/2 red onion, thinly sliced
  • 1 Granny Smith apple, cored, shredded
  • 2 tbs olive oil
  • 1 tbs honey
  • 1 tbs apple cider vinegar
  • 1 garlic clove, crushed

Method

  1. Step 1

    Place the beef, carrot, onion, celery, sugar and white vinegar in a large saucepan. Cover with cold water. Place over medium-high heat. Bring to the boil. Reduce heat to low. Bring to a simmer. Cook, covered, for 11/2 hours or until beef is tender.
  2. Step 2

    Transfer beef to a plate and discard the cooking liquid and solids. Cover beef with foil and set aside for 15 mins to rest. Use two forks to coarsely shred.
  3. Step 3

    Combine the beef, lentils, kale, onion and apple in a large bowl. Combine the oil, honey, apple cider vinegar and garlic in a small bowl. Drizzle over the salad mixture. Season. Toss to combine. Divide among serving bowls.
