Corned beef fried sandwich

Ingredients

  • 450g Coles Australian Beef Corned Silverside
  • 1 tbs black peppercorns
  • 1 brown onion, cut into quarters
  • 3 flat-leaf parsley sprigs
  • 1 carrot, peeled, chopped
  • 8 x 2cm-thick slices Coles Bakery Stone Baked Pane di Casa loaf
  • 40g butter, softened
  • 8 slices Coles Tasty Cheddar
  • 60g pkt Coles Australian Baby Rocket
  • ½ cup (160g) corn relish

Method

  1. Step 1

    Place the beef in a large heavy-based saucepan over medium heat. Add the peppercorns, onion, parsley and carrot. Cover with water. Bring to the boil. Reduce heat to low. Cover and cook for 2 hours or until beef is cooked through. Set aside in the cooking liquid to cool. Use 2 forks to shred the beef.
  2. Step 2

    Place the bread on a clean work surface. Spread evenly with butter. Top half the bread, buttered-side down, with half the cheddar, the corned beef, rocket, relish remaining cheddar and remaining bread slices, buttered-side up.
  3. Step 3

    Heat a large frying pan over medium-low heat. Place 2 sandwiches, buttered-side down, in the pan. Cook for 2-3 mins or until bottom is golden brown. Carefully turn and cook for a further 2-3 mins or until the cheddar melts and bread is golden brown. Set aside and cover to keep warm. Repeat with the remaining 2 sandwiches. Serve.
