Coronation quiche

Ingredients

  • 4 free-range eggs
  • 300ml thickened cream
  • 200g frozen broad beans, thawed, peeled
  • 120g baby spinach leaves, chopped
  • ¾ cup (90g) grated tasty cheese
  • 2 spring onions, thinly sliced
  • 2 tbs chopped tarragon
  • 2 tbs chopped mint
  • Sliced spring onion, extra, to serve
  • Tarragon sprigs, extra, to serve
  • Mint leaves, extra, to serve
  • Seasonal salad, to serve

Shortcrust pastry

  • 1 1/2 cups (225g) plain flour
  • 125g chilled unsalted butter, chopped
  • 2 free-range egg yolks

Method

  1. Step 1

    To make the shortcrust pastry, place the flour and butter in a food processor. Process until mixture resembles coarse breadcrumbs. Add egg yolks and process until dough just comes together, adding 1-2 tsp of iced water if necessary. Turn onto a lightly floured surface and gently knead until smooth. Shape into a disc. Wrap in plastic wrap. Place in the fridge for 30 mins to rest.

  2. Step 2

    Preheat oven to 200°C. Roll out the pastry on a lightly floured surface into a 3mm-thick disc. Line base and side of a 23cm fluted tart tin with removable base with pastry. Use a sharp knife to trim excess. Place in the fridge for 15 mins to chill.

  3. Step 3

    Line pastry with baking paper and fill with pastry weights or rice. Place on a baking tray. Bake for 10 mins. Remove paper and weights or rice. Bake for 8-10 mins or until light golden. Remove from the oven. Reduce oven temperature to 160°C.

  4. Step 4

    Whisk eggs and cream together in a large bowl. Season.

  5. Step 5

    Arrange the broad beans, spinach, cheese, spring onion, tarragon and mint over the pastry case. Pour over the egg mixture.

  6. Step 6

    Bake for 50-55 mins or until golden and the filling is set. Set aside for 10 mins to cool before transferring to a platter. Sprinkle with extra spring onion, tarragon and mint. Serve with salad.

Coronation quiche: What is the origin of this tart?

Quiche has long been a popular and versatile tart, beloved by many as an easy brunch, lunch, afternoon tea delight or weeknight dinner idea. Similarly, quiche is also a popular choice for entertaining guests at picnics, barbecues and every celebration in between. Today it’s joined the ranks as a coronation dish. 

Upon King Charles III’s coronation in 2023, alongside Queen Consort Camilla, the new king hand-picked quiche as the official party food. The Royal Family website describes the King Charles quiche recipe as “a deep quiche with a crisp, light pastry case and delicate flavours of spinach, broad beans and fresh tarragon”. Of course, the food experts at the Palace recommend this dish to be eaten either hot or cold and served with boiled potatoes and a green salad.
