Ingredients

  • 3 tsp olive oil
  • 1 brown onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stick, finely chopped
  • 1 garlic clove, crushed
  • 500g Coles Australian 3 Star Beef Mince
  • 410g Ardmona Rich & Thick Diced Tomatoes
  • ½ cup (125ml) beef stock
  • 1 tbs Worcestershire sauce
  • 1 tsp fresh thyme leaves
  • ½ cup (60g) frozen peas
  • 750g sweet potato, peeled, coarsely chopped
  • 40g butter, chopped
  • ⅓ cup (80ml) milk, warmed
  • ½ cup (60g) grated tasty cheese
  • Thyme leaves, extra

Method

  1. Step 1

    Preheat oven to 180°C. Heat oil in a large heavy based saucepan over medium-low heat. Add onion, carrot and celery and cook for 5 mins or until softened. Add garlic and cook for 1 min. Add mince and cook, stirring with a wooden spoon for 5 mins, to break up any lumps, or until browned. Add tomato, stock, Worcestershire sauce and thyme. Bring to the boil. Reduce heat to low. Simmer for 25-30 mins or until mixture has thickened and most of the liquid is absorbed. Remove from heat. Stir through the peas. Season with salt and pepper.
  2. Step 2

    Meanwhile, cook sweet potato in a large saucepan of boiling salted water for 10 mins or until soft. Drain and mash. Add butter, milk and cheese and mash until combined. Season with salt and pepper.
  3. Step 3

    Divide mince mixture between 4 x 1½ cup (375ml) capacity ovenproof dishes or ramekins. Top with sweet potato mash. Place on a baking tray and bake for 25 mins or until mash is golden and filling warm. Sprinkle with thyme leaves to serve.
