Easy pear and strawberry crumble

Ingredients

  • 1 lemon, juiced
  • 2 tbs honey
  • 1 tsp vanilla bean paste
  • 4 pears, peeled, cored, coarsely chopped
  • 500g strawberries, halved
  • 2 1/2 cups (300g) Carman’s Berry Crunchy Clusters Cereal
  • Ice cream, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Place lemon juice and honey in a large saucepan over low heat and cook, stirring, for 1-2 mins or until well combined. Stir in the vanilla. Add pear and bring to a simmer. Cook, stirring often, for 5-7 mins or until pear is just tender. Stir in the strawberry and cook, stirring often, for a further 5 mins or until strawberry softens.
  2. Step 2

    Strain the fruit mixture, reserving the poaching liquid in a heatproof bowl. Return poaching liquid to the saucepan and simmer over medium heat until mixture reduces to about 1/4 cup (60ml).
  3. Step 3

    Place the fruit mixture in a 6-cup (1.5L) baking dish and drizzle with the reduced poaching liquid. Sprinkle with cereal. Bake for 15 mins or until the top is golden brown. Serve with ice cream or yoghurt.
