Ingredients

  • 2 corn cobs, husks and silk removed
  • 400g can no-added-salt black beans, rinsed, drained
  • 100g red Perino tomatoes, quartered
  • 1 red capsicum, seeded, finely chopped
  • 1 green capsicum, seeded, finely chopped
  • 1 red onion, finely chopped
  • 1 firm ripe avocado, stoned, peeled, finely chopped
  • Corn chips, to serve
  • Sour cream, to serve
  • Lime wedges, to serve

Coriander jalapeño dressing

  • 1/2 cup chopped coriander leaves and stems
  • 1 tbs drained, sliced, pickled jalapeño chilli, chopped
  • 2 garlic cloves, halved
  • 1/4 cup (60ml) lime juice
  • 2 tbs olive oil

Method

  1. Step 1

    Use a sharp knife to run down the side of the cobs to release the kernels.

  2. Step 2

    Heat a lightly oiled frying pan over high heat. Add the corn and cook, stirring occasionally, for 5 mins or until lightly charred. Transfer to a large bowl and set aside to cool completely. Season.

    Meanwhile, to make the coriander jalapeño dressing, place the coriander, chilli, garlic, lime juice and oil in a small food processor or blender. Season. Process until well combined.
