Ingredients

  • 1 1/4 cups (185g) wholemeal plain flour
  • 2 tsp finely grated orange rind
  • 1/2 cup (110g) brown sugar
  • 1 1/2 cup (135g) Coles Rolled Oats
  • 1/4 cup (35g) Coles Sweetened Dried Cranberries
  • 1/4 cup (40g) Coles Australian Sultanas
  • 125g butter, chopped
  • 2 tbs honey
  • 1/2 tsp bicarbonate of soda
  • 2 tbs boiling water
  • 2 tbs Coles Australian Flaked Almonds
  • 1 tbs pepitas (pumpkin seeds)
  • 1 tbs honey, extra

Method

  1. Step 1

    Preheat oven to 180°C. Grease an 18cm x 28cm (base measurement) slice pan and line the base and 2 long sides with baking paper, allowing the sides to overhang.
  2. Step 2

    Combine the flour, orange rind, sugar, oats, cranberries and sultanas in a large bowl.
  3. Step 3

    Place the butter and honey in a small saucepan over medium heat. Cook, stirring, until butter melts. Add the bicarbonate of soda and boiling water and stir until mixture bubbles. Remove from heat. Set aside until the bubbles subside.
  4. Step 4

    Make a well in the centre of the flour mixture. Pour in the butter mixture and stir until well combined. Press the mixture into the prepared pan. Sprinkle with almonds and pepitas and drizzle with extra honey. Bake for 25 mins or until the slice is golden and firm to the touch. Set aside in the pan to cool. Cut into pieces to serve.
