Celery Soup

Ingredients

  • 20g butter
  • 1 brown onion, chopped
  • 1 garlic clove, crushed
  • 6 large celery stems, chopped, leaves reserved
  • 1 potato, peeled and chopped
  • 4 cups (1L) salt-reduced chicken stock
  • 3/4 cup (185ml) pouring (pure) cream
  • Celery leaves, to serve
  • Chopped chives, to serve
  • Toasted sourdough, to serve

Method

  1. Step 1

    Melt the butter in a large saucepan over medium heat. Add the onion and garlic and cook, stirring, for 5 mins or until soft. Add celery stems and potato and cook for 5 mins or until celery is just tender.

  2. Step 2

    Add stock and 1/2 cup (125ml) cream. Bring to a simmer. Cook, stirring occasionally, for 15-20 mins or until mixture thickens slightly. Use a stick blender to carefully blend until smooth.

  3. Step 3

    Ladle soup among bowls. Season. Drizzle with remaining cream. Serve with celery leaves, chives and toasted sourdough.
