Creamy chicken potato bake

Ingredients

  • 750g baby potatoes, quartered
  • 1 tbs olive oil
  • 4 spring onions, thinly sliced
  • 2 garlic cloves, crushed
  • 600ml thickened cream
  • 2 tsp chicken stock powder
  • 1 lemon, rind finely grated
  • 1 cup (120g) frozen peas
  • 1 Coles RSPCA Approved Hot Roast Chicken, bones removed, meat shredded
  • 350g broccoli, cut into small florets
  • 250g Perfect Italiano Perfect Bakes
  • Thyme sprigs, to serve
  • Thinly sliced spring onion, extra, to serve

Method

  1. Step 1

    Preheat oven to 190°C. Grease a round baking dish. Place the potato in a large saucepan and cover with cold water. Bring to the boil over high heat. Cook for 8 mins or until tender. Drain well.
  2. Step 2

    Meanwhile, heat the oil in a saucepan over high heat. Add the spring onion and garlic. Cook, stirring, for 2 mins or until spring onion softens. Add the cream, stock powder and lemon rind. Season. Bring to a simmer. Add the peas and stir to combine.
  3. Step 3

    Combine the potato, chicken and broccoli in prepared dish. Pour over the cream mixture and gently stir to combine. Sprinkle evenly with the cheese. Bake for 25 mins or until golden and heated through. Sprinkle with the thyme sprigs and extra spring onion
