Ingredients

  • 650g Coles RSPCA Approved Chicken Breast Fillets, halved horizontally
  • 500g pkt Coles Sliced White Mushrooms
  • 300ml thickened cream
  • 2 x 250g pkts Coles Microwave 7 Ancient Grains Rice
  • 2 bunches baby broccoli

Method

  1. Step 1

    Heat a large greased frying pan over medium-high heat. Cook the chicken for 2-3 mins each side or until cooked through. Transfer to a plate and cover with foil to keep warm. Cook mushroom, stirring, for 4-5 mins or until tender. Add cream to the pan and cook, stirring, for 2 mins or until sauce thickens slightly. Return the chicken to the pan. Season.

  2. Step 2

    Meanwhile, heat the rice following packet directions. Place baby broccoli in a microwave-safe bowl and cook in microwave on medium for 2-3 mins or until tender.

  3. Step 3

    Divide rice, chicken mixture and baby broccoli among serving plates. Season.
