Creamy pasta and bolognese bake

Ingredients

  • 375g Coles Penne Rigate
  • 1 tbs olive oil
  • 500g Coles Pork & Beef Mince Bolognese
  • 1 tsp Italian dried herbs
  • 500g Coles Mum’s Sause Bolognese
  • 250g cherry tomatoes, halved
  • 60g baby spinach leaves
  • 500g three cheese pasta bake sauce
  • 1 cup (120g) grated tasty cheddar
  • Flat-leaf parsley leaves, to serve
  • Cos lettuce wedges, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well. Transfer to a large heatproof bowl.
  2. Step 2

    Meanwhile, heat the oil in a large frying pan over medium-high heat. Add the mince and dried herbs, and cook, stirring, for 3 mins or until the mince changes colour. Add the bolognese sauce and tomato and bring to the boil. Remove from heat. Stir in the spinach.

  3. Step 3

    Add the cheese sauce to the pasta in the bowl and stir to combine. Spoon the mince mixture into a 6-cup (1.5L) baking dish. Top with the pasta mixture and sprinkle with cheddar. Bake for 35 mins or until cheddar melts and is golden brown.
  4. Step 4

    Sprinkle the pasta bake with parsley and serve with lettuce.
