Creamy penne carbonara

Ingredients

  • 375g Coles Australian Penne
  • 20g Coles Australian Butter
  • 200g Don Middle Bacon Rashers, rind removed, thinly sliced
  • 300ml Coles Thickened Cream
  • 2 extra-large Coles Australian Free Range Eggs, lightly whisked
  • ⅓ cup (25g) Coles Shredded Parmesan
  • 1 tbs coarsely chopped chives

Method

  1. Step 1

    Cook the penne in a large saucepan of boiling water following packet directions or until al dente. Drain, reserving ¼ cup (60ml) of the cooking liquid.
  2. Step 2

    Meanwhile, melt the butter in a large frying pan over high heat. Cook the bacon, stirring, for 3-4 mins or until crisp. Add the cream. Bring to the boil. Reduce heat to low and simmer, stirring, for 2-3 mins or until the sauce thickens slightly.
  3. Step 3

    Add the reserved cooking liquid to the frying pan. Remove from heat. Stir in the egg and parmesan.
  4. Step 4

    Add the penne to the carbonara sauce and toss to combine. Serve sprinkled with chives.
