Creamy spring onion and bacon dip loaf

Ingredients

  • 1 tsp olive oil
  • 175g short-cut bacon, finely chopped
  • 4 spring onions, thinly sliced
  • 2 garlic cloves, crushed
  • 250g cream cheese, softened
  • 1/2 cup (120g) light sour cream
  • 1/4 cup chopped flat-leaf parsley
  • 500g loaf Coles Bakery Pane di Casa
  • Olive oil spray
  • Mixed vegetable sticks, to serve
  • Spring onion, extra, shredded, to serve

Method

  1. Step 1

    Preheat oven to 180°C. Line a baking tray with baking paper.
  2. Step 2

    Heat oil in a medium frying pan over medium-high heat. Add bacon and half the spring onion. Cook, stirring for 3 mins or until bacon starts to brown. Add garlic. Cook, stirring, for 30 seconds or until fragrant. Drain on paper towel.
  3. Step 3

    Place three-quarters of the bacon mixture in a large bowl. Add the cream cheese, sour cream, parsley and remaining spring onion. Season. Stir until well combined.
  4. Step 4

    Cut 4cm from the top of the loaf and reserve. Scoop bread from centre of loaf, leaving a 2cm-thick shell. Tear bread pieces into 3cm pieces. Spoon bacon mixture into loaf. Place the loaf, torn bread and bread lid on prepared tray. Spray with oil. Bake for 20 mins or until bread is golden. Top with reserved bacon mixture and spring onion. Serve with vegetables for dipping.
