Crispy beef in egg nets

Ingredients

  • 6 Coles Australian Free Range Eggs, lightly whisked
  • 2 tbs peanut oil
  • 500g Coles Australian 3 Star Beef Mince
  • 2 garlic cloves, crushed
  • 1 tbsp grated fresh ginger
  • 1/4 cup (60ml) kecap manis (sweet soy sauce)
  • 250g pkt Coles Coleslaw Mix
  • 1 long red chilli, thinly sliced
  • 1/4 cup chopped coriander
  • Kecap manis (sweet soy sauce), extra, to serve
  • Coriander sprigs, to serve
  • Bean sprouts, to serve
  • Steamed jasmine rice, to serve
  • Lime wedges, to serve
  • Sliced chilli, extra, to serve

Method

  1. Step 1

    Combine the egg and 2 tbs water in a jug. Heat a non-stick frying pan over medium-high heat. Add 1 tsp of the oil. Swirl to coat. Drizzle one-quarter of the egg mixture back and forth over the pan to form a criss-cross pattern. Cook for 1 min or until egg sets. Carefully transfer to a plate. Cover to keep warm. Repeat with remaining egg mixture to make 4 omelettes.

  2. Step 2

    Heat remaining oil in a large frying pan over high heat. Add mince. Stir-fry for 3 mins or until mince has just changed colour. Add garlic and ginger. Stir-fry for 1 min. Add kecap manis and stir-fry for 2 mins. Add vegetables to pan. Stir-fry for 1 min or until just tender. Stir in chopped coriander and chilli.
  3. Step 3

    Place 1 omelette on a plate. Spoon one-quarter of the mince mixture over one-half of the omelette and fold to enclose. Repeat with remaining omelettes and mince mixture. Drizzle omelettes with extra kecap manis. Top with coriander sprigs and bean sprouts. Serve with rice, lime wedges and extra chilli.
