Ingredients

  • 250g corn chips
  • 400g pkt Coles Kitchen Mexican Style Salad Kit
  • 285g pkt Coles Australian Whiting Mini Fillets with Plain Crumb
  • 2 limes
  • 1 red onion, thinly sliced crossways, or 2 spring onions, thinly sliced

Method

  1. Step 1

    Preheat oven to 220°C. Line 2 large baking trays with baking paper. Arrange corn chips over 1 lined tray. Spray with olive oil spray and sprinkle with cheese from the salad kit. Place the fish on the remaining lined tray. Bake for 10 mins or until fish is golden and cheese melts.
  2. Step 2

    Meanwhile, finely grate and juice 1 lime. Place onion or spring onion, lime rind and lime juice in a bowl. Set aside for 5 mins to develop the flavours. Drain.
  3. Step 3

    Juice the remaining lime. Place the salad and dressing from the salad kit in a bowl. Drizzle with lime juice and toss to combine. Divide the salad mixture, corn chips, fish and onion or spring onion among serving bowls.
