Ingredients

  • 2 x 145g pkts Coles Entertaining Prawns in Blankets
  • 100g Coles Asia Rice Vermicelli Noodles
  • 350g pkt Coles Kitchen Asian Style Salad Kit with Soy & Sesame Dressing
  • 2 baby cos lettuce, leaves separated
  • 1/2 cup coriander sprigs

Method

  1. Step 1

    Preheat the oven to 180°C. Line a large baking tray with baking paper. Arrange prawns on the prepared tray and bake for 12-15 mins or until crisp and heated through.

  2. Step 2

    Meanwhile, cook the noodles following packet directions. Refresh under cold water. Drain well. Prepare the salad kit in a large bowl following packet directions, reserving the crunchy noodles and half the dressing.

  3. Step 3

    Place the lettuce leaves on a serving platter. Top with noodles, salad mixture and prawns. Sprinkle with the reserved crunchy noodles and coriander sprigs. Serve with the remaining dressing.
