Crunchy chicken noodle salad


  • 1 baby cos lettuce, shredded
  • 1 carrot, peeled, cut into long matchsticks
  • 1/2 red onion, thinly sliced
  • 1 Lebanese cucumber, cut into long matchsticks
  • 60g Coles Australian Baby Spinach
  • 1/2 bunch coriander, leaves picked
  • 3 cups Coles BBQ Seasoned Shredded Chicken
  • 2 x 74g pkts 2 minute noodles oriental flavour

Asian-style dressing

  • 1 tsp oriental seasoning (from noodle packet)
  • 2 tbs soy sauce
  • 1 tbs brown sugar
  • 1 tbs rice bran oil
  • 1 tsp sesame oil

  1. Step 1

    To make the Asian-style dressing, place the seasoning, soy sauce, sugar, rice bran oil and sesame oil in a screw-top jar and shake well to combine.

  2. Step 2

    Arrange the lettuce, carrot, red onion, cucumber, spinach, coriander and chicken in a serving bowl. Pour over the dressing and toss to combine. Season. Add the noodles and toss to combine. Serve immediately.

Recipe tip

Clever Storage:
To extend the freshness of a cos lettuce head, cut off stem and discard, then wrap the head in paper towel or a clean tea towel. Store in the veggie crisper in the fridge.
