Crustless quiche bites

Ingredients

  • 1 tbs extra virgin olive oil
  • 1 brown onion, finely chopped
  • 4 rashers rindless bacon, chopped
  • 2 garlic cloves, crushed
  • 3 thyme sprigs, leaves picked
  • 1 cup (120g) coarsely grated cheddar
  • 100g fetta, crumbled
  • 1 bunch chives, chopped
  • 375g tub Coles Smooth Ricotta
  • 6 Coles Australian Free Range Eggs
  • 24 red Perino tomatoes, halved

Method

  1. Step 1

    Preheat oven to 200°C. Line two 12-hole flat-based patty pans with paper cases or pieces of baking paper. Heat the oil in a medium frying pan over medium heat. Cook onion and bacon, stirring, for 5 mins or until browned. Add garlic and thyme and cook, stirring, for 2 mins or until aromatic. Transfer to a heatproof bowl and set aside to cool.
  2. Step 2

    Add the cheddar, fetta and half the chives to bacon mixture and gently stir to combine. Divide evenly among the prepared pans. Whisk the ricotta and eggs in a medium jug. Pour over the bacon mixture and top with tomato.
  3. Step 3

    Bake for 20-25 mins or until the egg mixture is just set. Set aside for 5 mins to cool before transferring to a serving platter. Sprinkle with remaining chives. Serve warm or at room temperature.
