Cucumber, lime and basil spritz in a large jug

Ingredients

  • 1 Lebanese cucumber, coarsely chopped
  • 1 lemon, coarsely chopped
  • 3/4 cup basil sprigs
  • 2 tbs caster sugar
  • 3/4 cup (185ml) lemon & elderflower cordial or lemon barley cordial
  • Ice cubes, to serve
  • 3 cups (750ml) chilled mineral water
  • Lemon wedges, to serve
  • Basil sprigs, extra, to serve

Method

  1. Step 1

    Place the cucumber, chopped lemon, basil and sugar in a large jug. Stir until the cucumber and lemon release their juice. Add cordial and stir to combine.
  2. Step 2

    Add ice cubes to the jug and top with mineral water. Serve with lemon wedges and basil sprigs.
