Ingredients

  • 2 pears
  • 2 cups (180g) rolled oats
  • 11/2 tbs chia seeds
  • 2 tsp coconut oil
  • 2 cups (350g) red grapes
  • 2 tbs maple syrup
  • 1/4 tsp ground cinnamon
  • 1 pear, extra, thinly sliced
  • 1/3 cup (55g) dry-roasted almonds, chopped

Vanilla almond milk

  • 2/3 cup (110g) natural almonds, soaked overnight in water, drained
  • 3 dates, pitted, coarsely chopped
  • 1/2 vanilla bean, coarsely chopped, or 1 tsp vanilla extract

Method

  1. Step 1

    To make the vanilla almond milk, in a blender, combine almonds, dates, vanilla bean or vanilla extract, 3 cups (750ml) water and a pinch of salt. Blend on high speed for 2 mins or until completely smooth (small flecks of almond and vanilla will remain).
  2. Step 2

    Using a box grater, coarsely grate the pears into a large bowl. Stir in the oats, chia seeds and 3 cups (750ml) of the vanilla almond milk. Cover and place in the fridge for at least 4 hours and up to 2 days.
  3. Step 3

    Heat a large frying pan over medium heat. Add the oil and grapes and cook, stirring frequently, for 6 mins or until the grapes soften and begin to burst. Remove from heat. Add the maple syrup and cinnamon and stir to combine.
  4. Step 4

    Divide the oat mixture among serving bowls. Top with the grape mixture, sliced pear and almonds. Drizzle with the remaining vanilla almond milk to serve. Serve with maple syrup and ground cinnamon.

Recipe tip

Waste wise: If you use a vanilla bean here, save the leftover half and add it to sugar, milk or liquor, such as vodka or rum, to infuse with vanilla flavour.
