Curtis Stone's Crispy pork stir-fry with baby broccoli

Ingredients

  • 2 tbs vegetable oil, divided
  • 1 bunch baby broccoli, florets separated, stems thinly sliced
  • 1 garlic clove, finely chopped
  • 3 tsp finely chopped peeled ginger
  • 2 spring onions, white and green parts separated and thinly sliced
  • 500g Coles Australian Pork 3 Star Mince Regular
  • 1/4 cup (60ml) soy sauce
  • 1 tsp Coles Cornflour
  • 1 tsp Coles Australian White Sugar
  • 2 cups (400g) Coles Long Grain White Rice, steamed

Method

  1. Step 1

    Heat a large heavy frying pan over high heat. Add 1 tbs oil. When oil is smoking, cook baby broccoli, tossing, for 2 mins or until brown in spots and crisp-tender. Transfer to a plate.
  2. Step 2

    Return pan to high heat and add remaining 1 tbs oil. When oil is smoking, add garlic, ginger and white parts of spring onions. Stir for 30 secs or until fragrant. Add pork and cook, breaking up with a spoon, for 3 mins or until pork is cooked through. Spread pork in an even layer and cook, without moving, for 3 mins or until crisp underneath.
  3. Step 3

    In a small bowl, whisk soy sauce, cornflour, sugar and ⅓ cup (80ml) water. Add to pork mixture with baby broccoli. Cook, tossing, for 30 secs. Divide rice among serving plates and spoon stir-fry over. Top with remaining spring onions.
