Curtis Stone's Mushroom bolognese with pasta spirals

Ingredients

  • 2 garlic cloves
  • 250g brown mushrooms
  • 1/3 cup basil leaves
  • 250g Coles Australian No Added Hormones 4 Star Beef Mince
  • 500g jar tomato pasta sauce
  • 300g fusilli pasta

Method

  1. Step 1

    In a food processor, pulse the garlic until coarsely chopped. Add the mushrooms and basil and pulse until finely chopped. In a medium bowl, stir the mushroom mixture and mince until well combined.
  2. Step 2

    Heat a large heavy-based frying pan over medium-high heat. Add the mince mixture. Cook, stirring to break up any lumps, for 5 mins or until cooked through. Add the pasta sauce and 1/2 cup (125ml) water. Bring to the boil. Reduce heat to low. Simmer, stirring occasionally, for 10 mins or until the sauce thickens slightly.
  3. Step 3

    Meanwhile, in a large saucepan of boiling water, cook the pasta following packet directions or until al dente. Drain, reserving 1/4 cup (60ml) of cooking liquid.
  4. Step 4

    Add the pasta to the sauce mixture in the pan and toss to coat, adding enough reserved cooking liquid to loosen the sauce if necessary. Season with pepper.
