Curtis Stone’s Pork fried rice

Change up your regular fried rice to Curtis' Pork fried rice. Although it is easy to make it does not lack delicious flavours.

Curtis Stone's Pork fried rice

Ingredients

  • 2 tbs Pearl River Bridge Superior Light Soy Sauce
  • 1 tbs Coles Smart Buy White Vinegar
  • 500g Coles Australian Pork 3 Star Mince
  • 1½ tbs canola oil, divided
  • 3 cups (500g) cooked Coles Brown Rice, cold
  • 1 head broccoli, cut into 2cm florets (about 2¼ cups/140g)
  • 1 large carrot, peeled, cut into small dice (about 1 cup/100g)
  • 1 garlic clove, finely chopped
  • 2 tsp grated ginger
  • ¼ small white cabbage, cut into small dice (about 1½ cups/250g)

Method

  1. Step 1

    In a small bowl, whisk the soy sauce and vinegar. Set the sauce mixture aside.
  2. Step 2

    Heat a wok or large heavy frying pan over high heat. Add half the pork and stir-fry, breaking up with a spoon, for 4 mins or until caramelised and cooked through. Transfer the pork to a heatproof bowl. Repeat with the remaining pork and transfer to the bowl.
  3. Step 3

    Heat ½ tbs oil in a wok until hot. Add half the rice and stir-fry for 3 mins or until rice is toasted. Transfer to a bowl. Repeat with another ½ tbs oil and remaining rice.
  4. Step 4

    Heat remaining ½ tbs oil in the wok until hot. Add the broccoli, carrot, garlic and ginger and stir-fry for 2 mins or until vegetables are tender. Stir in the cabbage and cook for 1 min. Add pork, rice and soy sauce mixture and stir until coated. Season to taste with salt.
