Ready in only 20 minutes this Stir-fried rice with steak and vegetables is full of nutritious and yummy ingredients.

Ingredients

  • 300g Coles Australian No Added Hormones Beef Scotch Fillet Steak
  • 2 tbs olive oil
  • ½ cup chopped brown onion
  • 15g minced peeled ginger
  • 4 garlic cloves, chopped
  • ½ cup chopped peeled carrots
  • ½ cup chopped red capsicum
  • ½ cup small broccoli florets
  • 4 kale leaves, trimmed, chopped
  • ½ cup snow peas, trimmed, chopped
  • 2 cups cooled cooked brown rice
  • 2 tbs oyster sauce
  • 2 tbs soy sauce
  • 1 tsp sesame oil
  • 4 extra-large Coles Australian Free Range Eggs, fried sunny-side up
  • Chilli sauce, to serve (optional)

Method

  1. Step 1

    Heat a chargrill on medium-high. Add the steak and cook for 2 mins each side for medium-rare or until deeply caramelised and cooked to your liking. Set aside to cool. Cut into bite-size pieces.
  2. Step 2

    Heat a large heavy-based saucepan over high heat. Add the olive oil. When oil starts to smoke, add the onion and stir-fry for 30 secs. Add the ginger and garlic. Stir-fry for 30 secs. Add carrots and stir-fry for 1 min. Add capsicum and stir-fry for 30 secs. Add the broccoli and stir-fry for 30 secs. Add kale and stir-fry for 30 secs. Stir in the snow peas. Add the rice and stir-fry for 1 min.
  3. Step 3

    Add the steak pieces to rice mixture in the pan and stir-fry for 30 secs. Add the oyster sauce, soy sauce and sesame oil. Stir-fry for 1 min or until the rice is heated through and the mixture is well combined. Season with salt.
  4. Step 4

    Divide the fried rice among serving plates. Top with the fried eggs. Spoon some chilli sauce, if using, over the top.
