To make the strawberry puree, in a blender, place the strawberry, sugar and lemon juice. Blend until smooth. Strain the strawberry mixture through a fine sieve into a bowl or jug.
Divide 1/4 cup (60ml) strawberry puree among 2 chilled coupe or champagne glasses. Top with half the wine or mineral water and, using a long spoon or straw, gently stir to combine. Top with the remaining wine or mineral water and garnish with sliced strawberries. Serve immediately.
