Elevate a simple tomato toast recipe by grilling the bread on the barbie and using a generous amount of green chilli and oregano leaves.

Ingredients

  • 4 small firm tomatoes (about 125g each), halved crossways
  • 1 1/2 tbs lemon juice
  • 1 long green chilli, thinly sliced
  • 1 garlic clove, finely chopped
  • 1 tsp sea salt flakes
  • 1/4 cup (60ml) extra virgin olive oil, divided
  • 6 slices Coles Finest by Laurent White Sourdough Vienna*
  • Extra virgin olive oil, extra, to serve
  • 2 tbs oregano leaves

Method

  1. Step 1

    Using the large holes of a box grater set over a bowl, grate the cut side of each tomato down to the skin. Discard the skins. Stir in lemon juice, chilli, garlic, sea salt flakes and 2 tbs oil. Set aside for 5 mins to develop the flavours. Season.

  2. Step 2

    Heat a barbecue grill on medium-high. Brush both sides of the bread slices with the remaining oil. Cook the bread slices for 2 mins each side or until toasted and lightly charred. Place on a serving platter.

  3. Step 3

    Spoon the tomato mixture onto the grilled bread and drizzle with a little extra oil. Sprinkle with the oregano and serve immediately. Serve with care Use the Carving Board as a serving platter or trivet when plating up hot food straight from the barbecue.
