Ingredients

  • 150g seeded fresh dates
  • 1/2 tsp bicarbonate of soda
  • 7 peeled bananas (670g)
  • 2 1/2 tbs olive oil
  • 1 cup (150g) wholemeal self-raising flour
  • 1 tbs Coles Perform Vanilla Plant-based Protein Powder
  • 1 free-range egg
  • 1 free-range egg white
  • 1/2 cup (60g) chopped walnuts

Method

  1. Step 1

    Preheat oven to 180ºC. Grease and line a 19cm x 29cm slice pan with baking paper.

  2. Step 2

    Place dates in a small saucepan with 1/2 cup (125ml) water and bring to the boil over high heat. Add bicarb and simmer for 1 min or until dates soften slightly.

  3. Step 3

    Reserve two (100g) bananas. Place the remaining bananas in the bowl of a food processor with date mixture. Pulse until combined. Add oil, flour, protein powder, egg and egg white. Pulse until well combined.

  4. Step 4

    Pour into the prepared pan and smooth the surface. Slice reserved bananas and lay over the date mixture. Sprinkle with walnuts. 

  5. Step 5

    Bake for 25-30 mins or until a skewer inserted into the slice comes out clean. Set aside for 5 mins in the pan before transferring to a wire rack to cool. Cut into 12 pieces to serve.

Store in an airtight container in the fridge for up to 3 days or in the freezer for up to 3 months. 

Use it up: You’ll have 1 leftover egg yolk from this recipe. Instead of throwing it out, freeze it for later. Pour the yolk into an airtight container and label how many are inside. To help yolks keep their consistency, add a little salt or sugar, depending on whether you want to use them in a sweet or savoury recipe, before freezing for up to 3 months. When you have enough, defrost in the fridge before using.

Ever wondered why you need to soak the dates in boiling water with bicarbonate of soda before adding them to some recipes? This helps soften the dates and makes them easier to blend. The dates are the sugar in this recipe so they need to be fully incorporated in the mix to get a great texture in your slice. 

It’s a good idea when lining the pan for this recipe to use some extra baking paper on the two long sides. Make sure the paper is overhanging the sides. Once the slice is ready to be removed, all you need to do is grab the baking paper and lift it. Don’t skip the 5 minutes of cooling before removing from the pan, though – if you try to take it out too soon, the slice can break and crumble.
