Easy Asparagus Tart


  • 2 sheets puff pastry
  • 1 Coles Australian Free Range Egg yolk, lightly whisked
  • 1 avocado, stoned, peeled, chopped
  • 1/4 cup (60ml) green goddess dressing
  • 1 bunch asparagus, woody ends trimmed
  • 300g snow peas, trimmed
  • 1/2 red onion, finely shaved (optional)
  • 60g baby rocket leaves
  • 2 soft-boiled eggs*

  1. Step 1

    Preheat oven to 200°C and line a large baking tray with baking paper. Place pastry sheets, overlapping slightly, on the lined tray and press edges to seal. Use a small sharp knife to score the edges to make a border, then brush with a little egg yolk. Bake for 25-30 mins or until pastry is golden brown and puffed.
  2. Step 2

    Meanwhile, process the avocado and dressing in a food processor until smooth.
  3. Step 3

    Heat a barbecue grill or chargrill on high. Cook the asparagus and snow peas for 1-2 mins or until just tender.
  4. Step 4

    Spread pastry with avocado mixture. Top with asparagus, snow peas, onion, if using, rocket and eggs to serve.
