Ingredients

  • 4 cups (1L) Coles Vietnamese Inspired Chicken Pho Broth
  • 1/2 Coles RSPCA Approved Hot Roast Chicken, skin and bones removed, meat shredded
  • 440g pkt thin rice noodles
  • 200g pkt Coles Australian Shredded Carrot
  • 1 bunch buk choy, coarsely chopped

Method

  1. Step 1

    Combine the pho broth and 2 cups (500ml) water in a large saucepan. Bring to the boil over high heat.
  2. Step 2

    Add chicken, noodles, carrot and buk choy to the broth mixture. Cook for 2-3 mins or until the buk choy wilts and chicken is heated through.
  3. Step 3

    Divide the pho mixture among serving bowls.
