Easy chicken roast with champagne sauce

This easy chicken roast recipe is ideal for entertaining. Paired with a luscious champagne sauce, it’s warming and full of flavour. Your guests will love it!

  • 1kg Coles RSPCA Approved Orange & Caramelised Onion Chicken Crown*
  • 1 tbs olive oil
  • 1 shallot, finely chopped
  • 1 garlic clove, crushed
  • ¾ cup (185ml) champagne or sparkling wine
  • 1 tsp finely grated orange rind
  • ¾ cup (185ml) cream
  • 1 tsp cornflour
  • 2 tbs finely chopped chives
  • 2 tsp orange zest

  1. Step 1

    Preheat oven to 180°C. Place chicken in a roasting pan and drizzle with oil. Roast for 1 hour 10 mins or until chicken is golden brown and cooked through.
  2. Step 2

    Meanwhile, place the shallot, garlic and champagne or wine in a medium saucepan over high heat. Bring to the boil. Reduce heat to low and simmer, uncovered, for 5 mins or until shallot is tender. Remove from heat. Stir in the orange rind and cream. Return to medium heat and simmer, uncovered, for 6 mins or until the sauce thickens slightly. Combine the cornflour with 1 tsp of water in a small bowl. Add to the cream mixture and bring to the boil. Simmer for 1-2 mins or until the sauce thickens slightly. Season. Add chives. Stir to combine. Sprinkle with orange zest. Serve with the chicken.
