Ingredients

  • 250g copha
  • 1/2 cup (125ml) rice malt syrup
  • 90g dark chocolate, finely chopped
  • 1/4 cup (25g) cocoa powder
  • 3/4 cup (60g) desiccated coconut
  • 4 cups (140g) rice puffs
  • Coles 100’s & 1000’s, to sprinkle

Method

  1. Step 1

    Line a 1/2-cup muffin tray with paper cases. Combine copha, rice malt syrup and chocolate in a medium saucepan over low heat. Cook, stirring, for 6 mins or until mixture melts and is smooth. Remove from heat and stir in cocoa powder and desiccated coconut. Transfer to a large heatproof bowl and stir in rice puffs.

  2. Step 2

    Divide rice puff mixture among the paper cases and sprinkle with Coles 100’s & 1000’s. Place in the fridge for 30 mins or until set.
