Easy leftover beef stir-fry

Ingredients

  • 250g dried noodles such as egg, rice or hokkien, or rice
  • 1 tbs oil such as peanut, vegetable or olive
  • 1 onion, thinly sliced
  • 1 capsicum, carrot or celery, thinly sliced
  • 1 bunch Asian greens or cabbage, shredded (stems and leaves separated)
  • 2 garlic cloves, crushed, or 1 tsp crushed garlic
  • 1 tsp grated ginger or finely chopped lemongrass
  • 500g thinly sliced leftover roast beef
  • 1/2 cup (125ml) stir-fry sauce such as hoisin, oyster, teriyaki or sauce of choice
  • 1 spring onion, sliced, or ¼ cup coarsely chopped chives
  • Herbs such as coriander, basil or parsley, chopped, to serve

Method

  1. Step 1

    Cook noodles or rice in a large saucepan of boiling water following packet directions. Drain.

  2. Step 2

    Meanwhile, heat oil in a wok or large frying pan. Stir-fry onion, capsicum (or carrot or celery), Asian greens leaves or cabbage, garlic and ginger, for about 3 mins or until vegetables are tender.

  3. Step 3

    Add beef, leaves of greens, and sauce, and stir-fry for about 5 minutes or until heated through.

  4. Step 4

    Serve over noodles or rice and sprinkle with spring onion and herbs.
