Easy mango ice cream

Ingredients

  • 2 medium mangoes, chopped
  • 2 passionfruit
  • 1 tsp vanilla bean paste
  • 1L Coles Irresistible Vanilla Bean Ice Cream, softened
  • 170g pkt Coles Waffle Cones
  • 150g white chocolate, melted
  • 3/4 cup (60g) shredded coconut, toasted
  • Grated white chocolate, to serve
  • Extra toasted shredded coconut, to serve

Method

  1. Step 1

    Blend mangoes in a blender until smooth and place in a bowl. Add pulp from passionfruit and vanilla bean paste and stir to combine.

  2. Step 2

    Place ice cream in a clean bowl and fold in the mango mixture. Cover and freeze for 3-4 hours or until firm.

  3. Step 3

    Meanwhile, dip the edges of waffle cones in the melted white chocolate and place on a lined tray. Sprinkle with coconut and set aside until set.

  4. Step 4

    Scoop the ice cream into the cones and sprinkle with grated white chocolate or extra coconut.
