Brimming with poached chicken, greens and noodles, this easy recipe for chicken noodle soup is the ultimate comfort meal. The best part is that it takes just 5 minutes to prep.

Easy poached chicken noodle soup


  • 2 x 500ml pkts Roll’d Chicken & Beef Pho Broth
  • 2 large Coles RSPCA Approved Free Range Chicken Breast Fillets (800g), trimmed
  • 225g Coles Asia Thin Egg Noodles
  • 2 bunches bok choy, trimmed, halved lengthways
  • 1/2 bunch coriander

  1. Step 1

    Bring the stock and 1 cup (250ml) water to the boil in a large saucepan over medium heat. Add the chicken and return to a gentle boil. Simmer for 2 mins. Remove from heat and cover with a lid. Set aside for 20 mins, allowing residual heat to finish cooking the chicken, or until the chicken is cooked through. Transfer the chicken to a plate. Slice.
  2. Step 2

    Prepare the noodles following packet directions. Drain well. Return the stock mixture to medium heat. Add the bok choy and cook for 1 min or until bok choy just wilts
  3. Step 3

    Divide noodles among serving bowls. Spoon stock mixture and bok choy over the noodles. Top with chicken and coriander to serve.
