Ingredients

  • 500g Coles Australian Beef Rump Steak, thinly sliced
  • 1 1/2 tbs green curry paste
  • 270ml coconut milk
  • 1 lime, zested, juiced
  • 1/4 pineapple, peeled, cored, thinly sliced
  • 1 Lebanese cucumber, thinly sliced lengthways
  • 1 cup coriander leaves
  • 1/2 cup mint leaves

Method

  1. Step 1

    Combine the beef, half the curry paste and 1 tbs of the coconut milk in a medium bowl. Add 2 tsp of the lime juice and toss to combine. Thread evenly among soaked bamboo skewers.
  2. Step 2

    Combine the pineapple, cucumber, coriander, mint and lime zest in a large bowl. Add the remaining lime juice and toss to combine.
  3. Step 3

    Heat a large frying pan over high heat. Cook the beef, in 2 batches, turning, for 4 mins for medium or until cooked to your liking. Transfer to a serving platter. Add the remaining curry paste and coconut milk to the pan and cook, stirring, for 1-2 mins or until mixture boils and thickens slightly.
  4. Step 4

    Arrange the pineapple salad on the serving platter. Drizzle the sauce over the beef skewers to serve.
