Easy zucchini bake

Ingredients

  • 4 zucchini, thinly sliced
  • 4 yellow squash, thinly sliced
  • 2 garlic cloves, crushed
  • 1/2 lemon, rind finely grated, juiced
  • 3/4 cup (185ml) light thickened cream
  • 1/2 cup (60g) shredded tasty cheddar
  • 1/2 cup (50g) panko breadcrumbs
  • Rosemary sprigs, to serve

Method

  1. Step 1

    Preheat oven to 200°C.  Layer zucchini and squash or pumpkin in a baking dish.

  2. Step 2

    Whisk garlic, lemon rind and juice, and light cream in a jug. Pour over the zucchini mixture in the dish. Bake at 200°C for 30 mins or until tender.

  3. Step 3

    Combine cheese and breadcrumbs in a bowl. Season. Sprinkle over the zucchini mixture. Spray with olive oil spray and bake for a further 15 mins or until golden. Top with rosemary sprigs to serve.

Clever storage:
To store leftovers, cover the baking dish and keep in the fridge for up to 4 days. Cut into individual pieces and reheat in the oven or microwave. Alternatively, divide among airtight containers and freeze for up to 1 month.

Smart swap: You can use 500g of butternut pumpkin instead of 4 yellow squash.
