Egg and avocado sandwich

Ingredients

  • 8 Coles Australian Free Range Eggs
  • 1 avocado, stoned, peeled, finely chopped
  • 1/3 cup (100g) whole-egg mayonnaise
  • 2 tbs finely chopped chives
  • 8 slices Coles Happy Gut White Bread
  • 1 cup alfalfa sprouts

Method

  1. Step 1

    Cook the eggs in a saucepan of boiling water for 9 mins or until hard-boiled. Transfer to a bowl of iced water for 2-3 mins to cool. Peel the eggs and coarsely chop. Place in a bowl with the avocado, mayonnaise and chives. Season and stir to combine.
  2. Step 2

    Spoon the egg mixture evenly over half the bread slices. Top with alfalfa. Top with remaining bread slices and cut in half to serve.
