Method

  1. Step 1

    Place the black and white sesame seeds in a small frying pan over medium heat. Cook, shaking the pan occasionally, for 5 mins or until toasted. Transfer to a bowl and cool for 10 mins. Add the poppy seeds, garlic flakes, onion flakes and salt flakes and toss to combine.

  2. Step 2

    Store in an airtight container.

Be sure to use garlic granules and onion flakes, not powders, as they have a coarser texture that suits this crunchy sprinkle mixture. 

Sprinkle over cottage cheese, hummus, mashed avo, tzatziki grilled fish, meat, chicken and scrambled eggs.

What is everything bagel seasoning? There’s a famous type of bagel you can get in New York City called the Everything Bagel. Why is it called this? Well, it has to do with the seasoning on the bagel. When you walk into a bagel bakery in NYC, you get to customise your bagel order – not just the fillings, but also the type of bagel. You can select between sesame, salt, poppy seed or onion bagels, just to name the most popular ones. The Everything Bagel is basically all of these flavourings combined onto one bagel. The combo of sesame seeds, poppy seeds, garlic, onion and salt flakes is addictive. It’s rich in umami flavour, savoury, crunchy, and has a slightly sweet undertone, even though it doesn’t have any sugary ingredients. Because people in America love it so much, a US supermarket called Trader Joe’s started to sell ‘Everything But the Bagel Sesame Seasoning’, and people began adding it to many other savoury dishes besides bagels. Its popularity took off from there. Thankfully, even though Australia doesn’t have Trader Joe’s, it is easy to make at home with our simple everything but the bagel seasoning recipe.

Here are some tips for how to make everything bagel seasoning. It’s important to follow these tips to ensure you achieve the intended flavour.

  • To help ensure your everything bagel seasoning is of the highest possible quality, avoid using ingredients that have been sitting in your pantry past their best before date. 

  • Make sure all the ingredients are roughly the same size – you don’t want fine grains of salt mixed with larger sized garlic granules and poppy seeds because the salt will end up pooling at the bottom of your jar. Do not use garlic powder and onion powder for this same reason. 

  • Use sea salt flakes, such as Maldon Sea Salt Flakes. The flakes have a crunchy texture and introduce pockets of bright saltiness throughout the seasoning, instead of taking over as the predominant flavour. 

  • Use garlic granules, also called dried minced garlic or dehydrated garlic. Besides its garlicky flavour, it gives the coarse and crunchy texture that you want.

  • Use onion flakes, also called dried minced onion. It brings an umami flavour and nice crunch to the seasoning mix.

  • The original seasoning uses both black and white sesame seeds, but you can just opt for one of them. 

  • It’s crucial to toast your sesame seeds beforehand, if you didn’t already buy pre-toasted seeds. For a small amount of seeds, toast them over medium heat in a frying pan until fragrant and golden. Black sesame seeds won’t turn golden, so you’ll know they’re ready when they become aromatic. It’s better to toast black sesame seeds on a stovetop versus an oven because you need to gauge its doneness by its smell.

How to use your everything but bagel seasoning

Sprinkle everything bagel seasoning over your eggs, avo on toast, salads, burgers, wraps, sandwiches, popcorn, grilled corn on the cob, and in dips like hummus, guacamole and tzatziki. You can toss potatoes or veggies in it before roasting for extra flavour. It’s a great topping on baked tofu, for any vegetarians looking for new ways to season tofu.
