Filled with delicious falafel, crumbled fetta and brown rice, this easy dish makes for a filling meal that's sure to satisfy. Serve with lemon zest and mint leaves to complete the dish.

Falafel fetta and rice salad


  • 450g microwavable brown rice
  • 1/4 cup (40g) currants
  • 1/4 cup (60ml) lemon juice
  • 225g pkt falafel balls
  • 2 large carrots, peeled, cut into long matchsticks
  • 60g pkt Coles Australian Baby Rocket
  • 1/3 cup shredded mint
  • 2 tbs extra virgin olive oil
  • 200g pkt Coles Danish Fetta, crumbled

  1. Step 1

    Heat the rice following packet directions. Transfer to a large heatproof bowl. Set aside, stirring occasionally, to cool slightly.
  2. Step 2

    Meanwhile, combine the currants and lemon juice in a small bowl. Set aside for 5 mins to soak.
  3. Step 3

    Heat the falafel following packet directions. Break into pieces.
  4. Step 4

    Add the currant mixture to the rice in the bowl with the carrot, rocket and mint. Drizzle with oil. Season and toss to combine.
  5. Step 5

    Divide rice mixture among serving plates. Top with falafel and fetta.
