Fast fish pie

Ingredients

  • 600g firm white fish fillets, cut into 4cm pieces
  • 350g cauliflower, thinly sliced
  • 1 cup (120g) frozen peas
  • 2 slices prosciutto, finely chopped
  • 1/2 bunch dill, sprigs torn
  • 1 lemon, zested
  • 1 tbs cornflour
  • 2 sheets frozen puff pastry, just thawed
  • 1 Coles Australian Free Range Egg, lightly whisked
  • 1 tsp sesame seeds

Method

  1. Step 1

    Preheat oven to 200°C. Place the fish, cauliflower, peas, prosciutto, dill, lemon zest and cornflour in a large bowl. Season. Gently toss until well combined. Transfer the mixture to a 6-cup (1.5L) round pie dish.
  2. Step 2

    Cut 1 pastry sheet into 3 strips. Brush 2 adjacent edges of remaining pastry sheet with egg. Place 1 pastry strip, slightly overlapping, over each edge, pressing lightly to make a large square. (Use the remaining pastry strip to decorate top of the pie, if desired.)
  3. Step 3

    Brush edge of the pie dish with egg. Place pastry over fish mixture, pressing into edge of the dish. Fold excess pastry inwards. Brush the pastry with egg. Use a sharp knife to cut 3 slits in centre of the pastry. Sprinkle with sesame seeds.
  4. Step 4

    Bake the pie for 25 mins or until the pastry is golden brown and puffed. Cut into wedges to serve.
