Ready to serve in just 15 minutes, this speedy caesar salad is the ultimate side or light meal. It’s loaded with egg, bacon and leafy greens.

Feel-good caesar salad


  • 4 Coles Australian Free Range Eggs
  • 4 bacon rashers, chopped
  • 1/3 cup (95g) Greek-style yoghurt
  • 1 tbs lemon juice
  • 150g pkt Coles Kitchen 8 Leaf Blend
  • 1 red onion, thinly sliced

  1. Step 1

    Bring a small saucepan of water to the boil. Add the eggs and cook for 5 mins for soft yolks* or until eggs are cooked to your liking. Refresh under cold water. Peel and cut into quarters.
  2. Step 2

    Meanwhile, heat a medium frying pan over medium-high heat. Add the bacon and cook, stirring occasionally, for 5 mins or until golden and crisp. Transfer to a plate lined with paper towel.
  3. Step 3

    Combine the yoghurt and lemon juice in a small bowl. Arrange the salad leaves, egg, bacon and onion on a serving platter. Drizzle with the yoghurt mixture and season.
