Ingredients

  • 2 free-range eggs
  • 1/2 cup (140g) Greek-style yoghurt
  • 1 tsp vanilla bean paste
  • 1 tsp ground cinnamon
  • 4 slices Coles High Fibre Wholemeal Sandwich Loaf
  • 20g butter
  • Greek-style yoghurt, extra, to serve
  • Mixed berries, to serve*
  • Coles Finest Pure Canadian Maple Syrup, to serve

Method

  1. Step 1

    Whisk 2 free-range eggs, 1/2 cup (140g) Greek-style yoghurt, 1 tsp vanilla bean paste and 1 tsp ground cinnamon in a large shallow bowl.

  2. Step 2

    Dip 4 slices of Coles High Fibre Wholemeal Sandwich Loaf in the egg mixture, 1 at a time, for 20 secs to soak. Transfer to a plate.

  3. Step 3

    Melt 10g butter in a large frying pan over medium-low heat. Cook 2 bread slices in the pan for 1-2 mins each side or until golden and just cooked through. Cut in half and transfer to a serving plate. Wipe the pan clean. Repeat with an extra 10g butter and remaining bread slices.

  4. Step 4

    Serve with extra Greek-style yoghurt, mixed berries and Coles Finest Pure Canadian Maple Syrup.
